Scrummy Carrot Cheese Flapjacks

A departure from sweet baking, because we had a lot of carrots which needed using up! These are really tasty as a snack and have fibrous oats and vitamin-rich carrots too.

Carrot cheese flapjack

Ingredients

  • 150g oats

  • 50g unsalted butter

  • 100g grated (or finely chopped using a food processor/small chopper) carrots

  • 2 tablespoons tomato puree

  • 2 large eggs

  • 75g cheddar, grated

  • 1 teaspoon of your preferred herb/spice; I love a bit of paprika myself

  • Optional for extra nutrition: 1 heaped teaspoon of chia seeds

Method

Pre-heat the oven to 180° (fan)/200° (conventional).

Melt the butter in the microwave (approx. 40 seconds).

Put the melted butter, carrot, tomato puree and chia seeds (if using) into a bowl.

On top, add the oats and then break the eggs in.

Stir until everything is coated. Add the cheese and stir through.

Press down into a lined brownie baking tin.

Bake for 20 minutes.

Leave to cool and cut into pieces.
